Raspberry Popsicles

Summer is here! And that means pool parties, hungry kids and summertime treats like popsicles. Here’s a healthier solution to the sugary artificial coloring and flavoring of so many frozen summer treats. The recipe is so quick and simple that it's a great kid-friendly activity. (Who doesn’t love to mash raspberries into mush?!?) It only takes 5 minutes to whip up a batch of about 10 popsicles.  

They’re guaranteed to be a pool party favorite! 

INGREDIENTS:  

  • 1 cup raspberries 

  • 1 cup fat free greek yogurt (can also use full fat or lactose-free greek yogurt.) 

  • 2 TBLSP pure maple syrup  

DIRECTIONS: 

  1. Mash the raspberries.  

  2. Add the yogurt and maple syrup. Stir to combine. 

  3. Spoon to popsicle molds. *  Freeze for about 4 hours or until set.  

  4. Store in a ziplock bag in the freezer.  

*No popsicle molds? No problem. Bathroom sized Dixie cups and popsicle sticks work just as well. Pour the mixture into a Dixie cup, filling about halfway. Set the popsicle stick up in the middle. Once frozen, just peel off the paper cup and VOILA! A popsicle!
