Zoe’s Monday Healthier Recipe!

Let’s talk about stuffing!! Typically stuffing includes bread. ALOT of bread. Bread’s not bad for you, but maybe there are BETTER choices? Like bread-less stuffing that’s really tasty!! It’s easy, healthy, and a huge Thanksgiving hit. (Here’s a tip....make a double batch!!)

Here’s the recipe: 

4 TBLSP Butter
1 onion chopped
2 large carrots, peeled & chopped
2 celery stalks chopped
1 small head of cauliflower (maybe green or purple instead of white just for fun!!)
1 C chopped mushrooms
Kosher salt
Freshly ground black pepper
1/4 C chopped fresh parsley
2 TBLSP chopped fresh rosemary
1 TBLSP chopped fresh sage, or 1 tsp of ground sage
1/2 C vegetable broth or chicken broth

1) In a large skillet over medium heat, melt butter. Add onion, celery, and carrot, and sauté (yes, I used that word!) until soft, about 7-8 minutes.
2) Add cauliflower and mushrooms and season with salt and pepper. 
Cook until tender, 8-10 minutes or more. 
Add parsley, rosemary and sage and stir until combined, then add the vegetable broth and cover.
Cover on low heat until totally tender, and liquid is absorbed. 
About 15 minutes. Stir once or twice during this final process.

Serve.
