It’s Monday again. The 3rd Monday in June to be exact, and
3 is my number….my favorite number. I have 3 kids. I have 3 sisters and 3 brothers. “I love you” has 3 words to it. 
3 is my number, so it’s no surprise that when I found recipes with only 3 ingredients I felt like I hit the jackpot. 
Making a quick, healthy meal doesn’t get any simpler than a recipe with just 3 ingredients! 
Let’s get started:

• 1 can chinks light tuna* (in water)
• 1 small avocado
• Juice of 1 lemon**

• Place tuna, avocado and lemon in a bowl and mash together.
(Yes, that’s all you do!)

• Spoon onto toasted whole grain bread.
• As an open faced sandwich on whole grain bread.
• As a dip with whole grain crackers. 
• In a salad, on a bed of dark leafy greens.

That’s it!! You’re ready for dinner! It’s a quick fix meal when you’ve had a busy day, or lunch….this is easy to bring to work/school unmashed, and prep it on the spot! 
Experiment with flavors, by adding salt/pepper, basil, rosemary, or other seasonings.

*Substitute canned salmon for Tuna
**I found that the juice of a whole lemon was too sour. On my 2nd test of this recipe I used 1 tsp of lemon and that was less tart.
