Hi, it’s Zoe, the Nutrition Consultant at Elevate, and it’s recipe time again! Cooking is definitely not my first love! I’m the queen of “If a recipe isn’t simple, I probably won’t try it.” I’d rather spend my time running or biking, but my family has to eat, so I have to “create” meals. (I don’t like to use the word “cook”—cooking gives me anxiety!) Make it even more simple by using frozen green beans or broccoli!
This recipe is adapted from blog.myfitnesspal.com, and is so simple, it shows up on our family menu quite often.
3 ingredients, 1 pan!
1 SKILLET CHICKEN, GREEN BEAN (OR BROCCOLI) AND TOMATO
1 1/2 lbs boneless skinless chicken breast cut into chunks.
1 TBLSP olive oil
1/2 C low sodium chicken broth
2 TBLSP balsamic vinegar
1 lb green beans or broccoli (fresh or frozen)
1 point cherry tomatoes, halved
Salt and pepper to taste
In a large skillet, heat the olive oil. Adds the chicken chunks and cook until slightly browned. Add the chicken broth and balsamic vinegar, reduce heat to medium-high, cover and simmer for 10 minutes. Add green beans or broccoli and cherry tomatoes, Cover, and cook 3-4 minutes more until chicken is cooked thoroughly and vegetables are tender.
Season as desired with salt and pepper.
Serve on a bed of greens, with or without a side of brown rice, faro, barley or quinoa.
