Chilly, windy days call for warm soup! Make a double batch and freeze 1/2 of it for next week. (Meal Prep made easy!) This red lentil soup is loaded with soluble fiber which helps fill you up, and helps lower total and “bad” cholesterol! Because it’s high in potassium (thank you lentils, spinach and tomatoes!) it helps regulate blood pressure too! Loads you with 16 grams of protein per serving, and by using low sodium or no salt added products like diced tomatoes and vegetable broth, you lower your sodium intake! It’s like magic soup and happiness in a bowl!
It only takes about 1/2 hour of prep & cook time, and dinner is served! Serves 4, makes about 7 1/2 C.

RED LENTIL SOUP
1 TBLSP olive oil
4 medium carrots, chopped
1 small onion, chopped
1 tsp ground cumin
1-14.5 oz can diced tomatoes (I use Organic Truth no salt added)
16 oz vegetable broth (Organic Truth no salt added)
2 C water
1/4 tsp salt
1/8 tsp ground pepper (Who measures this?!?..just toss in a pinch!)
1 -5 oz bag of baby spinach
*Heat the olive oil in a 4 qt. saucepan* (Don’t walk away from it.)
Add carrots and onions. Cook 6-8 minutes, until carrots and onions are slightly tender. Add cumin, stir, and cook 1 minute.
Add tomatoes, broth, lentils, water, salt & pepper. Stir. Cover and heat to boiling. Turn down the heat and let it simmer 8-10 minutes, until lentils are tender. Stir in the spinach.
*(Don’t forget about the oil heating on the stove....it smokes and sets the smoke alarms off. Just trust me.)
